They're filled with a blueberry & lemon compote, by the way.
1/2 lb shortening or lard
2 c sugar
6 c AP flour
2 tsp baking soda
2 tsp cream of tartar
1 tsp salt
1 1/2 tsp vanilla
1c soured milk or buttermilk
Combine shortening and sugar. Beat in eggs.
Mix and sift the powdered stuff separately.
Add the latter to the former with milk and vanilla.
Chill dough, roll out to 1/8th inch thick.
Cut 3" rounds, top one round with filling then lay other round atop it all.
Bake at 400 F for 10 minutes.
Seemed to work pretty well! Jerusha, Kirsten (the Gem of Peoria) and I are the only ones who have tried this batch (I only baked a dozen to test) and Priscilla has suggested some apple sort of filling.
